Muffin Mondays....cept it's not Monday...oh well

Today was Thursday but I am calling it Muffin Monday instead! I tried out a new, pretty healthy muffin recipe I found in the September 2010 Canadian Living magazine. It was good, tweaked it a little but I think my recipe could use a little bit more moisture. Next time I would change up some of the white flour and add some applesauce for more moisture. I would also hit up the health food store for pumpkin seeds because I really love those.


Cranberry Seed Muffins - Canadian Living
1 3/4 cup flour (I used pastry flour)
3/4 cup whole wheat flour
1/2 cup oat or wheat bran (I used Holy Crap breakfast cereal)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup raw sunflower seeds
1/3 cup pumpkin seeds (I didn't have any so skipped these and added coconut)
3/4 cup sugar
1/4 cup brown sugar
2 tsp grated orange rind
2 eggs
1 1/3 cup buttermilk (I used Almond/Coconut milk and 1/4 cup creme cos I had it)
1/2 cup unsalted butter (I used 1/4 cup salted butter)
2 cups cranberries

  • In a large bowl add the first 8 ingredients and mix well
  • Whisk sugars and orange rind together. Beat in eggs and milk until combined
  • Stir in flour mixture and add cranberries
  • Spoon into 12 greased muffin cups
  • Sprinkle top with seeds and oat bran (I sprinkled with unsweetened coconut)
  • Bake at 375 F for about 25 minutes
About 342 calories per muffin.

This Year I Got a Fitbit

This year I got a Fitbit. I am in love!! Megan and Brandon each got a pair around Christmas time. They were all pumped about them and their enthusiasm was infectious. I wanted one but I never seemed to have time to do anything about it. Eventually I went online to www.fitbit.com to do some research. I really wanted a tangerine one (Tangerine is my new favourite color for 2015) but they were not available. I thought I could wait for a bit and see if they became available. In the interim we bought a Fitbit  Charge for Perry's mom for her birthday. She really loves to walk. After a few weeks my jealously got the best of me....I couldn't wait any longer and ordered my own in plain old boring black!! I cannot tell you how much more motivated this little band has made me!! Is it the email they send when you have walked 10,000 steps in a day. Or is it the badges they award you like gold stars? Or is it watching the scale number shrink? I am not sure. I am completely obsessed to the point I am using all of the app. Inputting my food and water intakes. Watching my sleep patterns and boy that really is an eye opener. My sleep quality sucks. Setting challenges and goals and encouraging my friends.

When I wake the first thing I do is grab my iPad and see what the Fitbit app has to tell me about my sleep pattern. My goal is to improve my sleep patterns in this next year. Better and more sleep is my desire for the coming year. So far they have been horrendous.


One click and you see the time. Who knew I would be wearing a watch? I haven't wore one in years, not since I started carrying a cell phone. Two clicks and there are your steps taken. Three clicks and your heart rate appears. On the fourth click you can see the distance you have logged. Your calories burned is next on the fifth click. Flights of stairs climbed is number six. Steep hills count here too. 

The online shopping experience from this company was excellent. Free and quick shipping. The app was simple to install on my Mac, iPad and IPhone. It also works with Androids and Windows. It's a friendly interface with lots of fun options. The main screen, your Dashboard, is where you input your activities, water and food if you so desire. Your wrist band syncs automatically through out the day. The Charge HR gives a little buzz when you hit 10,000 steps. Badge notification comes via email. Congratulations and it feels good!! Another selling feature for me was adding friends and family with Fitbits for some healthy competition and encouragement.

Why do Humans Litter???

The snow has finally melted along the Hansen Lake Road. The ditches are emerging filled with garbage. Why are people such pigs? Why do some people have no regard for the environment? Why is it so hard to leave a bag in your vehicle until you arrive at your next stop and place your garbage in a bin there? These are age old questions and I don't believe they will ever be answered. I walk along the ditches just absolutely sick with disgust at the filth that has been thrown there. Last weekend Perry and I went out to enjoy the sun on a nice spring day. Our thoughts were to collect bottles & cans for our recycling lady up here at the lake. (Yes thats my mom lol) Well, we collected bottles and really had our eyes open to the trash out there. We rode our quads north about 6 miles and then returned. In a stretch of 12 miles the garbage was unbelievable. I can only imagine how much there is everywhere. I am making it my mission to do my part. In all good conscience I cannot just "not pick" the garbage up. Every little bit helps and I am gonna make our little stretch of the highway clean again. We live in a  beautiful safe country so why can't we keep it pristine for the next generation? Come on people pay it forward.... if we all pitched in think how good we would all feel with a job well done. Lets do the right thing and pick up after yourself and everyone else. Be prepared and always carry a few latex gloves and garbage bags with you. Your children learn by watching you....give them something good to watch.

Apple Comparison

Lately my snack of choice for the middle of the afternoon munchies has been a crisp, freshly cut apple with natural peanut butter. Apples have never been my favourite snack. Boring and I really dislike them turning brown if they are not ate soon enough. Living in a small town we really don't have much variety for vegetables and fruits so I thought with what is offered I would do some comparisons and find my favourite. No more boring Macintosh or .... for me. 


Lady Alice vs Honeycrisp

Lady Alice has a dense and crisp texture. The overall apple has the look of a homegrown apple, not as shiny, not as red more heirloom-ish. An excellent choice for eating fresh as well as cooking or baking with. It doesn't brown fast and will keep its shape when cooked. Available from February thru May. 

The Honeycrisp is sweet, firm and tart. Perfect for eating fresh. It has much larger cells than most apples. They rupture when bitten and fill your mouth with juice. A rosy red apple similar in shape and color to New Zealand supplies Canada with these apples in the off season. 

In my opinion these two apples are both wonderful but I choose the Honeycrisp as my raw eating apple of choice for this spring.

Blog Revisions

If you have been following my blog then you will notice I have been making some changes recently. Time for an update, time for a refresh. It is spring.... rebirth... regrowth. Make it new and exciting, well I am going to make it new, I am not sure how exciting. It takes a little while to get it accomplished, to remember how to make changes and write HTML. When I don't work with that everyday, it takes a bit to refresh my mind on the ins and outs of Blogger. 

I still want to work on my header, I haven't been happy with it so what I have on there is temporary. So periodically it is going to be changed up. Nothing wrong with change. Bear with me as I change and learn and improve.

A funny thing about life, just when you think all is settled, everything suddenly changes. In all aspects of my life right now there are changes. In the last few years there have been moves, weddings, babies, housebuilding, illness, and it seems like nothing will ever be sane again. Through it all is my rock my fiancĂ© Perry who I love immensely. Someday we will sit back on the deck at the Lakehouse and laugh about it all.

Work on the Lakehouse has been very slow. Chalk that up to spending 6 weeks in Australia when my daughter-in-law had Isla, time in BC for Sawyer's first birthday, Christmas.... sick with the awful colds everyone had this year, a month in Palm Springs, more time in BC with Sawyer and more colds.... We anticipate beginning rock work again very soon. The snow is melting and the days are getting warm. My hands ache to get into the rock gardens and feel the earth begin to warm beneath the mulch.

Palm Springs Trip - Highlights

This January we spent a great month in Palm Springs with Perry's parents, Bold & Violet. Great family meals, day trips, hiking and good conversations. Angela and Sherry came down for a week and we had such a great time. Fresh grapefruits, lemons and oranges picked off the tree every few days. The dry desert air was a change from our usual humid vacations on the beach. An amazing array of Palm trees grow in and around this arid city. An oasis in the desert full of beautiful flowers. We had a lot of fun finding a great grocery store. Accidentally happened into a couple Mexican ones that seemed like we were in another country. Interesting to see the prickly pear and cactus foods for sale. A huge difference in our usual brands. I would have really loved to have brought some hot sauces and salsas home from there though. So many different taco shells and tortillas. Then we found ourselves in a whole foods natural organic store that my daughter Ashley would have loved. I loved this one too but we were looking for kind of specific items. Finally we came upon "Ralphs", just like Safeway, perfect for our type of shopping. Bonus was their unique in-store liquor. Buy 6 of anything and pay way less. Was pretty much cheaper to buy vodka than bottled water!! Needless to say the mimosas flowed pretty freely in our house. 

We enjoyed visiting the The Living Desert Zoo & Botanical Gardens, day trip to Algodones, Mexico, Painted Mountain, Palm Springs Aerial Tramway, the canyons, a few malls and outlets, a few quilting stores and just getting to know the area.
